Wicked Asparagus,Bacon and Blue Cheese Quiche

2 Sheets of frozen puff pastry (thawed)

6 eggs

1/2 cup cream

1 bunch of asparagus

6 rashers of short cut bacon (diced)

1 red onion (diced)

150 g Wicked Blue cheese (crumbled)

50 g Wicked Farmhouse Cheddar (grated)

Salt and pepper

1 tsp olive oil

Preheat oven to 200 degrees

Place one sheet of puff pastry in a tart/quiche pan (one with a removable base is preferable) trim the edges, if needed cut up the other sheet of pastry to finish lining the tray and set aside.

In a frypan heat the olive oil, add the onions and bacon and cook until the onions are softened. Leave to cool a little then transfer to the quiche pan making sure to spread it evenly over the bottom of the pastry.

In the same frypan cook the asparagus, adding a pinch of salt and pepper. This will only take a couple of minutes as you don’t want to overcook them.

Arrange the asparagus over the bacon and onions and sprinkle the crumbled Wicked Blue cheese over the top.

In a bowl whisk together the eggs and cream and pour over the rest of the ingredients. Top it off with the grated Wicked Farmhouse Cheddar and put it in the oven and cook for 20-25 minutes.

Let it cool a little before removing from the pan and serving.
