Produced from the vines in the Coal Valley Region Tasmania.



Hand-picked at 24 Brix% but guided primarily by flavour development, the grapes are whole bunch pressed in a 1 tonne German bladder-style press, and are transformed into a Chablis-style (northern France) dry Chardonnay with very little oak (fermentation in stainless steel with new French oak staves to minimize oxidation and maximize freshness and acidity), 

resulting in a purity of aromas and taste, with light citrus lime zest and pamplemousse flavours, "goût de pierre à fusil" (gunflint)” notes and well-balanced acidity.
